    Quick breakfast for P3?

    I am starting P3 on March 4th. I need simple breakfast and lunch ideas. I work 7-7 and don't get a break.

    Chicken legs are my go to P3 for anything. I brush CO on them, throw them in the oven at 350 for however long nearly an hour usually. Then I keep them in the frig. Sorry if this sounds gross. But I grab one or two and off I go. With napkins

    You could also make big batches of egg casserole and take out whatever you want and nuke it in the AM.

    I work 7-7 as well, only it's the overnight shift. But I usually have some cut-up veggies bagged and ready to go, along with some tuna salad or leftover meat in a plastic container, so I can quickly pack a lunch. If I don't have time to make a shake or cook eggs before I go, I'll have a Quest protein bar. And I usually take an apple to eat on the way home. It helps me stay awake on the half-hour drive, and keeps me from wanting to eat everything in sight when I get home!

    Do a search for mug muffin. You can mix the dry ingredients ahead of time. That an apple with 2T natural peanut butter are my go-to breakfast items. I don't work outside the home but with small kids who seem to need or want something every 5 minutes I either eat something easy and quick or else I don't eat!

    I made quiche and breakfast muffins (recipes below), bagged them into individual portions, and stuck them in the freezer. For mornings that I am short on time, grab them, pop into microwave, and voila. (that is my plan anyway, I haven't tried them yet but my husband said that they are good)

    CHEDDAR AND ONION QUICHE – 6-8 servings

    1 medium onion, chopped, 4 ounces
    Sliced mushrooms
    1-2 tablespoons butter
    6 eggs
    1 cup heavy cream
    8 ounces cheddar cheese, shredded
    1/2 teaspoon salt
    Dash pepper
    Dash garlic powder

    Sauté the onion in butter until tender. Grease a 9-10" pie plate. Arrange the cheese evenly in the plate; top with the onions. Beat the eggs, cream and seasonings. Pour evenly over the onions. Bake at 350º 35-40 minutes until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting.


    BREAKFAST MUFFINS – 12 servings

    1 pound NSA sausage (if you can find it) or NSA bacon
    Chopped veggies of choice (I like onion and red peppers)
    12 large eggs
    2 cup shredded cheddar cheese
    1/2 tsp salt
    1/4 tsp pepper

    Preheat oven to 375F. Mix all ingredients together. Spray a 12 cup muffin pan and pour egg mixture into each muffin cup evenly. Bake for 30 minutes. Cool for 5 minutes and serve.

    Don't like eggs. . . . I have fage greek yogurt each morning with vanilla cream stevia and unsweetened applesauce.

    Believe it or not, I have never eaten Greek yogurt, and I finally just googled it to see the difference! So - double the protein, half the carbs, half the sodium. Not as much calcium, about equal in calories and more expensive. Except for the $$, it sounds like a P3 dream!

    It would be wonderful if that was an option at my conference in a week; I could do plain yogurt with some Stevia. And actually, I like the plain regular yogurt; I like the tanginess. Unfortunately, though, I am suspecting they will go cheaper with regular yogurt.
