OK, figured it out!
Not gourmet by a long shot (I can do gourmet, but I'm still starting slow on P3). But this was dinner. Herb crusted salmon with garlic-braised sugar snap peas. No recipe, just put seafood rub on the fish and saute the sugar snap peas with some garlic and MCT oil, throw in some water and steam 'til done.

Well seems I'm on a roll because I just couldn't resist putting together tonight's dinner too! Sorry no specific recipe here (I just made this up), but I did give all the ingredients in the image so you can make this to taste. Enjoy! PS. I know the overly-ripe avocado is making this salad look a bit "slimy" but darn is it ever tasty!
OOPS forgot to add to the list of ingredients: in each dish (the chicken & the dressing for salad), I also added just a touch of sesame oil and a few dashes of crushed red pepper flakes.
