cocoa crack
Tuna (half can of oil-packed tuna with 1 Tb mayo)
Nuts (I get the Planters Wholesome Nut Mix, which is almonds, cashews, and macadamias, in the little 200-calorie packets. Very handy to take to work.)
Egg fried in butter and coffee with cream
...and the following 2 recipes that get me through:
1. SUPER EASY "CHEESECAKE"
8 oz cream cheese, softened
8 oz heavy cream
1/2 cup water
1 package Jello sugarfree Cheesecake flavor pudding mix
Whip the cream cheese till smooth, add cream and blend, then water, blend till smooth. Add pudding mix and continue to whip till thick, then refrigerate. I smooth it into a square pan, then when it's firm, I divide it as evenly as I can into 8 servings. I figure each serving to be about 212 calories and about 3-4 grams carbs. And it tastes heavenly!
2. BACON, EGG, AND CHEESE MINI-QUICHES
4 eggs
1 cup heavy cream
6 oz, shredded cheddar cheese
1/4 cup Parmesan cheese
1/4 cup coconut flour
6 strips of crisp, cooked bacon, crumbled
couple dashes of onion powder
couple dashes of garlic powder
pinch of nutmeg
3/4 tsp salt
1/4 tsp pepper
Preheat oven to 375. Generously grease 12 muffin cups with butter or coconut oil, or use silicone cups that don't require greasing (my choice).
Divide the bacon, cheddar, and parmesan evenly among the muffin cups.
Whisk the eggs and cream together. Add coconut flour and spices, whisk well to combine. Using a ladle or small measuring cup, add the egg mixture to each muffin cup over the bacon and cheese. Here the recipe says to bake for 20-25 minutes, or until the muffins have risen and are browned on top. I have to bake them at least 40 minutes for that to happen. I don't know if my oven's temp gauge is a little off or what, but I'd say just watch them after about 20 min.
I haven't figured out the calories or carbs on this. I just eat 1 or 2, depending on how much else I've had to eat that day.
By the way, this recipe came from the Fast Paleo website.
Hope this helps somebody!
