Hello! I have been blessed with many recipes and advices from this board. Now I want to share my favorite recipes for P2. I am not good at measuring; I usually just using approximate. So, feel free to modify it.
BAKED CHICKEN WITH CABBAGE (I eat this everyday during P2) 5-6 oz shredded / cut cabbage 100 gr. Chicken breast (you could slice it thin if you like) Garlic salt Red pepper (optional) Black pepper (optional) Five spice powder Stevia
1. Seasoned the chicken with garlic salt, five spice powder, red pepper (optional) and tiny bit of stevia powder. 2. Seasoned cabbage with garlic salt and black pepper (optional) 3. Wrapped them together inside aluminium foil 4. Bake at 350 F for 30 minutes.
I usually make in batches (5-7 pieces at a time) and wrapped them individually in aluminium foil. The chicken came out very juicy and the cabbage is very tasty. You could replace the chicken with fish and it taste very good also. Sometimes I seasoned the chicken with Italian seasoning and garlic salt, instead of Five Spice and garlic salt. Just experiment any seasoning that you like. I used to grilled my chicken in George Forman, but came out to dry for my taste. With baking inside aluminium foil, the chicken came out very juicy.
TOM YUM SHRIMP (Thai Style Sour Soup)base 6 cups Water Juice of 2 lemons 4 packets of Stevia 1 stalk of lemon grass (use 2 if small) 3 pc kaffir leaves ¼ tsp sambal oelek (chili sauce) optional ¼ tsp red pepper ¼ tsp onion powder ¼ tsp garlic powder ½ tsp fresh chopped garlic ¼ tsp salt 2 slices galangal 2 Tsp apple cider vinegar - Bring everything to boil for 5-10 min. Divide by 3. - To each soup base, add 5-6 oz of shredded cabbage. Boil again until cabbage is tender then add 100 gr. of shrimp. - Boil until the shrimps are cooked.
CELERY AND CHICKEN SOUP 100 gr of thinly sliced chicken breast 8 oz of cut celery 2 cups of water ¼ tsp salt A dash of white pepper A dash of black pepper ¼ tsp garlic powder
Bring everything to boil until the celery is tender.
Julie, I eat chicken everyday, my other protein is either shrimp or fish. And my favorite veggie for P2 is cabbage since I cannot eat brocolli.
Here I am adding my favorite cucumber salad recipe: 1 large size cucumber (9-10 oz) thinly sliced 4 TBsp apple cider vinegar 1 packet stevia 1/4 tsp garlic salt a dash of Red pepper a dash of Five spice powder (optional) Mixed together and leave it overnight. It's very good with grilled shrimp!
dee, Wow you give me another idea! Thank you!...I would try adding curry powder and fish tomorrow! I tried italian seasoning on fish and cabbage and I liked it also.
Made this tonight, AWESOME! Thanks. I put the chicken next to the cabbage in the foil and closed. Was I supposed to put the chicken on top of the cabbage? I wasn't sure since it was raw.
cocoafluff, I usually "burried" the chicken in the middle of the shredded cabbage.
Yesterday I made my chicken and cabbage with Walden Farm Asian dressing (sugar free, calorie free), add some garlic salt to it. I let it marinade in the fridge for an hour (inside the foil and ready to bake). Bake at 350 for 30 min....and that was my dinner....delish!
