I have been religously following the list of foods I'm allowed to eat but was not calculating the calories. Turns out the last too days I was at 566 calories. I was asking this a little while ago. Most everyone told me that as long as you properly weigh the meat, and only eat the allowed foods that you should be fine, and that calorie counting isn't a big deal. I titled it "How important is calorie counting". So you can search for that and see the answers if you want to.
