Just made this for lunch today and my husband loved it! It served two so cut it in half if making just for one person.
200 g mahi mahi cut in bite size pieces 1 c. chicken broth (I used organic, low sodium) 1 c. water 1 garlic clove 1 tbsp. organic tomato paste Organic italian herb blend (Wild Harvest - Albertsons brand) A few dashes of Trader Joe's hot sauce (no sugar, just vinegar and jalepeno) 2 cups organic tomatoes salt and pepper to taste
I simmered the broth with all the herbs and garlic and paste for about 10 minutes. Then I added the fish and tomatoes and cooked for about 3 minutes. It was very filling! Would also be good with shrimp.
