This is delicious! It's my favorite P2 dinner (made it for my husband tonight and he loved it and he's not dieting!- of course he had a much bigger portion than me)
3.5 oz chicken 1 Melba Toast 1/2 of a tomato vinegar water Garlic (or garlic powder) salt pepper basil (dry or fresh)
First set your oven to 350 Take your melba toast, salt, pepper, and any other spices you want, put it in a food processor until you get crumbs Take the chicken and coat it with vinegar diluted with water Coat chicken in the crumb mixture until it is completely covered. Slice up the 1/2 tomato and put it in the food processor. Add basil and chopped/pressed garlic or garlic powder, and salt and pepper blend until you get a thick sauce. Spread the sauce on top of the chicken

bakes for 25-30 min... and will be ready just in time for you to eat!
The first time I made it, I didnt use the food processor- I jsut mushed up the tomato and mixed garlic and basil.
