Cauliflower Popcorn Recipe Ingredients:
* 1 head of cauliflower * 3 Tbsp. (45mL) olive oil * 2 Tbsp. (30mL) Mrs. Dash® Table Blend
Directions:
1. Preheat oven to 450°F (220°C). 2. Cut out and discard cauliflower core and thick stems. Trim remaining cauliflower into florets the size of popcorn. 3. Toss thoroughly in a bowl with olive oil and Mrs. Dash® Table Blend. 4. Spread cauliflower on a sheet pan and roast for approximately 60 minutes, or until nicely browned (that's the carmelization process converting the dormant natural sugars into sweetness). 5. Turn three or four times during roasting. The browner the florets, the sweeter they will taste. Serve immediately.

Wow - that sounds good. Looking at P3 in about three weeks.
Anxious to get there, but unhappy with my current loss on P2 even though I haven't cheated. IBS issues (I think) may have stalled me for almost two weeks now. I am stuck at 8-10 lbs. and going for 40 days. Had really hoped for 25 lb loss this round and maybe 15 the next. Now I don't know what to expect! But am anxious (I think...) for P3!
Sorry to hear about you P2 issues. I'm sure you can release at least 10 more in the next 3 weeks. I am loving p3 (for to day anyway) I am .6 below my LDW on day 6. Planning on introducing a serving of almonds and making the cauliflower pizza either today or tomorrow.
Does the califlower dry out like popcorn so you could put it in a bag? There is also a product called "Just the Cheese" that are little round puffed cheese pops that are rather popcorn-like. Crunchier than califlower and more portable for a snack. All they are is puffed real cheese with butter, dehydrated to give them a popcorn like texture and taste. I eat them with flax/chia seed crackers and almonds at work for a great P3 friendly snack mix.
