I don't know who I got it from, but MAN is it good; thicker than the cocoa crack, doesn't have as much as an aftertaste (I used splenda) and the peanut butter just adds to the deliciousness!
COCONUT FUDGE
1/4 cup virgin coconut oil 2 tablespoons natural peanut butter, brought to room temperature (I used Smuckers Natural peanut butter) 2 tablespoons cocoa 1/2-1 cup granular Splenda or equivalent, to taste (I think I used just under half a cup)
In a small bowl, microwave the coconut oil about 30 seconds on HIGH to melt. Whisk in the peanut butter then the cocoa. Add the Splenda to taste. I recommend starting with about 1/4 cup and add more if you think it needs it. Pour into a small nonstick foil-lined container and freeze until solid, about 20-30 minutes. Gently cut into squares with a thin, sharp knife. Store in the refrigerator or freezer. Makes 4 servings Can be frozen
I didn't have any almond butter in my house...this is an expensive diet and I've slowly been able to stock my pantry. I am a huge peanut butter fan, and this is one of only two times I've had it in P3 (without a gain whoo hoo!) so for now, it's my snack of choice. :)
My no sugar added peanut butter I thought was ok for P3...no?
Yes, no sugar PB is ok in P3. Technically the peanuts (if it isn't creamy) are not. But if u can limit yourself and the peanuts are not causing any problems, I say GO FOR IT!!!! I just started R2P3 today and am definitely going to have to try it.
The problem with peanut butter is that it is starchy. Just watch and listen to your body and pull back if you need to. As soon as I get to Phase 3 (two days to go) I'll be trying it with Almond Butter.
amiedanny the reason I asked is like you all I have in the house is Almond Butter. But boy do I love me some peanut butter. (Family ate all the peanut butter but wouldn't touch the almond butter, if it is my diet stuff they know better.) It is in the freezer now. Let you know how it tastes.
Amiedanny, the ingredients aren't the issue. The issue is that peanuts themselves are technically NOT a nut, but a legume. Some people do fine with them, but they are starchy enough that they make some people gain or have trouble stabilizing on P3. People just need to use caution with it, or try substituting almond butter.
