    I want to avoid using canola oil as instructed in my recipe.

    Supposedly you can, but I tried it 3 times and ended up with a runny mess. I tried it with my food processor and my blender. Both failures. I have made mayo before with success, but haven't been able to succeed with MCT oil.

    Thanks for letting me know. I am thinking canola oil is generally frowned upon in a whole food diet. What about olive oil?

    I always use olive oil to make mayo... turns out very good. The recipe from "The Joy of Cooking" is a good one.

    Thank you! I will try this tomorrow with tuna and celery. Can't wait!! You can tell I did a steak day today, I'm fantasizing about what I plan to eat tomorrow.

    Hope you enjoy your mayo. :) Try adding a dash of red ground pepper... gives it a little extra zing.

    I used EVOO and use the following recipe from a post I've seen here:

    1 egg
    1 Tbsp freshly squeezed lemon juice
    1 cup EVOO
    1/8 tsp pepper
    1/2 tsp seasalt

    (this is a little salty for me, so next time I make it I'll lessen the salt)

    I use my blender; do not have a food processor.

    AND I like this much better than the Walden Farms version that has starch in it!

    Yeah, canola oil is not a real good thing. If you look at it in terms of good-for-you oils, then its EVOO (but not for cooking!) for salad dressing, bread dipping - or even drizzling over already cooked veggies.....and coconut oil (unsweetened, unrefined, blah blah blah) for cooking.

    I made garlic mayo with my Magic bullet using MCT oil. It was heavenly!!! I would think you could omit the garlic if you want. I don't have the exact amounts as I was experimenting to see if this would even work, but here's what I did:

    Mash two small cloves garlic so it's a nice paste with a little salt, you don't want large bits in it. Put that in the blender with about a 1/2 tsp.(one quick squeeze) lemon juice. Then slowly add very cold MCT oil, about 1/8 - 1/4 cup, then blend. Then add another squeeze lemon juice, and blend again. Add another 1/8 - 1/4 cup oil, blending in between additions with another squeeze of lemon. Then slowly drizzle in some cold liquid egg whites bit by bit, blending in between additions until it starts to thicken up. Keep alternating the juice, oil and egg white, mixing until very thick. I just used the ones in the carton, easier than using a real egg to control the amount, but you could try adding 1/2 egg white at a time. In total I think I had used just over 1/2 cup oil, about 1/2 a lemon and just under 1/4 cup egg white. I also mixed in a few drops of liquid smoke at the end for added flavor. You could also add pepper.
