    Hi all~
    I am going to a family gathering this weekend and was assigned to brink a dessert. Can anyone share a dessert that you have tried and liked? P3 friendly, please! Thanks!

    Strawberry shortcake... using oopsie rolls as the "cake"...

    Bake your oopsie roll cake. Let cool. Make fresh whipped cream sweetened with stevia or erythritol and vanilla (or cocoa powder or both).

    Slice strawberries.

    Layer however you want.

    How about chocolate mousse? Couldn't be simpler! Whip some whipping cream, add cocoa powder, a little vanilla and sweetener (I like xylitol) to taste!

    Yeah, I actually just made my personal serving of strawberry shortcake with the "mousse" of whipped cream, cocoa powder, and vanilla stevia.

    I do have a recipe for chocolate mousse tho... both done traditionally with egg and non-traditional with olive oil. I swap out the sugar with xylitol.

    The Oopsie rolls may be a bit eggy for some people expecting a real cake. There are some great sugar-free cheesecake recipes around and plenty of different cakes with almond flour...or even a flourless chocolate cake made with a sugar substitute....or maybe a fruit tart with some type of custard filling?
