    I saw Organic Rainbow Chard and was curious, so I bought it. Now it is staring at me from the fridge. I've been stalking all of the discussions looking for a recipe. I want a little variety and to expand my veggie horizons. Any ideas for a P2-er?

    (Not sure if cooking spray is on protocol but you might get away w/out it?)

    Swiss Chard Chips
    Serves 4
    8 large leaves of Swiss Chard
    Cooking spray
    Salt
    1. Wash Swiss chard
    2. Cut Swiss Chard into approximately 2” x 2” squares
    3. Spray baking sheet with cooking spray
    4. Arrange chard pieces on sheet, not touching
    5. Coat exposed side of chard with cooking spray
    6. Sprinkle salt on top
    7. Bake 3 minutes at 350 F, then turn over and bake another 3
    minutes, or until chard is crisp
    8. Place chips on paper towel to absorb excess oil
    Serve hot
    Cook’s Notes:
    These chips taste better than they look! Also, a little salt goes a
    long way.

    Hmmm. That sounds like it might be good. I will try it out without the oil and some salt and spices. Thanks for the idea!

    You can put parchment paper on your cookie sheet and skip the oil. I did it a very similar recipe with spinach.

    Spinach sounds great. I wonder about that because i have some fresh spinach too. Thanks I have some parchment. I'll try it.
