    I didn't see a topic for this after searching, so i am just checking, I ate a little of this with some plain salad at a dinner I went to and here are the ingredients:

    1 large eggplant (about 1 pound)
    1 glove garlic, minced
    1/4 teaspoon salt
    1/4 cup finely chopped fresh flat-leaf parsley, plus more for garnish
    2 tablespoons tahini
    2 tablespoons lemon juice

    I had maybe a quarter cup or less, but is it P3 friendly? inquiring minds need to know...thanks!

    baba ganoush is really good, it is an eggplant variation of hummus, but hummus has chickpeas, so it is not P3 friendly. but maybe the baba ganoush is, it is really tasty. well, I think eggplant is on the list of accepted p3 veggies.

    The guidelines for P3 are no sugar or starch. Since this recipe has no chickpeas (a starch) it's fine! I eat baba ganoush a lot in P3, I put it on eggs, salads, vegetables...it's yummy! Eggplant is fine to have, as are most vegetables.

    yes, it can even act as the salad dressing since it has olive oil in it, it makes a blah salad zesty!

    I didn't make it, I bought it at sprouts, it's in the hummus/deli section, it was very well made, with only the ingredients I listed.

    I'll have to go check at Whole Foods for some. The eggplant is cooked, right?
