egg whites, cheese and nuts can all cause significant problems. if meat bothers you, i'd do the sf protein shakes. fish and chicken probably will bother you less than red meat or pork. you might not be getting enough protein.
i would not worry so much about your carb count- try eating lots of veggies (3-6 servings), and one low-sugar fruit.
I'd cut the peanut butter first. It's not even technically a nut but a legume and not allowed. Some eat it fine and some don't but since you're struggling, I'd cut it first.
