    Does anyone know of certain chips that are okay in P3? If not, do you have a recipe for anything even chip related?

    Throughout all of P2, I've been craving my nachos that I make. I really want to make them once I'm into P3, but I can't seem to find any safe chips or something even close to a chip.

    I can't remember where I got this.
    Goldfish Crackers:
    • 1 1/2 cups of finely shredded cheddar cheese
    • 1 1/2 cups of almond flour
    • 1/4 teaspoon of iodized sea salt
    • 1/2 teaspoon of garlic powder
    • about 3 tablespoons of cold water to hold the dough together

    Preheat oven to 350 degrees F. Pulse all the ingredients (except for the water) together in a food processor or blender. Add the cold water to the dough, a bit at a time, until the mixture is holding together well enough to work into a ball or two. Separate into two balls of dough, and place each ball on a Silpat, parchment paper, or other non-stick surface (which you will transfer to a baking sheet). You can roll it all on one sheet, but I find it easy to do it on two sheets. And two sheets bake more evenly. Roll each dough ball out until flat and about 1/8 to 1/4 inch in thickness. Using a pizza cutter or knife, score the dough into squares, OR if you buy a Goldfish cookie cutter, that would be cutter (I don't have one, yet:). Bake for 25 minutes, or until crackers are browned. The darker, the crunchier. ***Note: even if you used whole wheat flour instead of almond flour, you would be doing your family a favor:)

    KALE CHIPS
    1 Bunch Kale
    2 tbsp Olive Oil
    2 tbsp Lemon Juice
    1/4 tsp Sea Salt

    Preheat oven to 300. Cut Kale into 1/2'' pieces, massage oil/lemon/salt mixture into leaves.
    Place on wax paper and bake for 12 minutes.

    There is a blog with what looks like a great recipe for chips made with shredded zuchini. I am not quite in P3 yet so haven't tried it - although I already have the recipe printed!! http://cleochatra.blogspot.com/p/eats-recipes.html

    I plan on trying many of the recipes on that site - my mouth waters everytime I look :)

    Now I just need a flour substitute that is not nut based. My husband is allergic to nuts and I want to cook and bake for both of us at 1 time.

    I found some great crunchy snacks in the raw foods section of Whole foods. Foods Alive makes some really yummy crackers made of flax seed and spices. I also found onion flatbread that was really yummy (not really bread...it's just dehydrated onion and spices flatted into a square you can roll around lunchmeat), chia seed crackers and kale chips that taste just like cheesy Doritos (I haven't yet found a Kale recipe that replicated these) You can order them on Amazon.com too.

    There is a turnip chip recipe floating around in one of the cookbooks. It should look more like chips, and maybe taste more like it too since it is also a root vegetable.
