So I'm cooking dinner tomorrow night for a friend and her parents. I'm going to do cedar plank sockeye salmon, but I'm stumped on what to do for a good side dish besides a salad. I'm looking for something P3 friendly (for me, not them lol). Her mom has a pretty strict diet too, similar to HCG protocol but they aren't on the actual diet. If anyone has any good suggestions, please help! I want to impress with a great meal. Thanks guys
Since it's summer and zucchini is one of my favorites, in P3 I would shread zucchini, toss it in a fry pan for a bit to "dry" it out and then add garlic, salt and pepper and alfredo sauce. Not exactly lowfat, but definately P3 friendly and a nice change of pace. Would be a nice "homey" side to go with salmon. (easy to make your own alfredo: cream cheese, heavy cream, butter and parm).
Or, a pan of roasted veggies: zucchini, cauliflower, broccoli, brussle sprouts, mushrooms, onions, asparagus, ect...
This is yummy. But beware cream cheese doesn't agree with some people on P3.
Twice Baked Cauliflower: 1 large head cauliflower 4 oz. cream cheese 2 T butter 1/4 cup minced scallions or green onions 1/4 cup freshly grated Parmesan cheese 6 slices nitrate free bacon, cooked and cut into pieces 1 cup sharp cheddar cheese (Never pre-shredded cheese) Sour Cream (for topping)
Preheat oven to 350 F. Cut out stem and core from cauliflower, and cut into small pieces. Cook in large pot of boiling water until cauliflower is tender, but not overly soft. Drain well and mash with potato masher, leaving some chunks. Mix in cream cheese, butter, green onion, Parmesan, and 3/4 of the bacon. Spread evenly in an 8 X 8 inch glass casserole dish. Sprinkle with cheddar cheese and reserved bacon. Bake 30-35 minutes, or until hot and bubbly. Top each serving with a dollop of sour cream. Makes 6 servings.*If you really want to fool your family, pipe this into a hollowed out potato shell!
