    HELLO EVERYONE!
    I LOVE good food! Being a personal chef has given me some help on HCG, so I'd like to share some of my personal recipes with you! :)

    IMPORTANT------PLEASE READ------Most recipes posted will tell you which phase it has been modified for, please only use the one for your phase...there may be options for other phases listed and the original recipe I use for my clients and or family will be posted at the end. THANK YOU FOR READING THIS :)

    I hope these are helpful to you during HCG and after as well. Please share your recipes with me that you just LOVE! :)




    This is one of my recipes that my clients ask for over and over. This version is modified to fit P2. Once you get to P3 you can go with the original which I will post below, it is cheap and easy to make :)

    Taco Salad

    3.5 oz Ground Chicken breast (I grind it in my vitamix)
    2 tsp Crushed Garlic
    1 tsp Cumin
    1 tsp Chili Powder
    Lettuce, shredded and chopped into small pieces
    Cilantro
    Lemon Juice
    Salt and Pepper

    Mix together chicken, garlic, cumin and chili powder(careful not to over mix). Place in nonstick skillet. Cook and stir in over medium heat just until cooked through, adding water to keep from sticking and to give it moisture. Serve over lettuce and top with desired amount of cilantro and lemon juice. Salt and pepper to taste.


    Phase 3

    Taco Salad (serves 4, large servings)

    1 LB Ground Chicken or Trukey (doesn't have to be breast only)
    1/2 C Onions, chopped
    1 1/2 Tbs Garlic, crushed
    1 can Organic Diced Tomatoes
    1 Tbs Chili Powder
    1 Tbs Cumin
    Shredded Lettuce
    Green onions, sliced
    Sour Cream or Ranch Dressing
    Cilantro (if desired)

    Cook Ground meat, onions and garlic over medium heat until no longer pink, breaking up whil cooking. Drain if needed. Stir in can of tomatoes, chili powder and cumin. Heat through. Serve over lettuce and top with green onions, sour cream and cilantro.

    I usually make chili tortilla strips to break up on top. These would be for P4:

    Cut up organic corn tortillas into long strips. Spread out in cookie sheet. Spray with organic olive oil spray and immediately salt and sprinkle with chili powder. Broil (6 inches away) for 3 minutes with door closed. Remove, turn strips over and cool for an additional 2-5 minutes WITH DOOR OPEN. Watch carefully so they dont burn. They are done when they snap when you break them. The thicker the tortilla the longer they may take to get crispy.

    THIS IS ANOTHER RECIPE EVERYONE LOVES!!! I like it because it's great when you cook for a croud and many have allergies! I serve mine over Spaghetti squash and I designed the sauce to compliment it ( you can add squash in phase 3 and 4) Granted the original is much better...I'll post that below :)

    PHASE 2
    CHICKEN MEATBALLS WITH TOMATO SAUCE

    11/2 C Tomato Sauce (recipe below)
    100 grams Ground Chicken breast
    1 heaping tsp Garlic, crushed
    1/4 tsp SWEET Basil
    1/4 tsp Onion Powder
    pinch of Salt
    pinch of Pepper

    Heat sauce in a small skillet or pan over Meium heat. Mix remaining ingredients well and form into 3 balls. When sauce starts to boil, stir well, add meatballs, cover, and reduce heat to simmer. Cook 5 minutes and turn balls over. Cook for an additional 3-5 minutes or until cooked through.


    ORIGINAL RECIPE FOR PHASES 3 & 4

    TURKEY OR CHICKEN MEATBALLS WITH TOMATO SAUCE
    Makes 4 servings

    3 1/2 Cups Tomato Sauce (recipe below)
    1 LB Ground Turkey or Chicken ( best to use meat with some fats in it)
    1/2 C Onion, finely chopped
    1/2 C Carrots, finely grated
    1 heaping TBS Garlic, crushed
    1 tsp SWEET Basil
    1/2 tsp Salt
    1/4 tsp Pepper

    Heat tomato sauce in a large skillet with lid over medium heat. Place onions with 2 TBS water in a small skillet, cover and cool until tender. Meanwhile in a bowl mix turkey, carrot. garlic, basil, salt and pepper and onions once cooked. Shape into 24 meatballs (or 12 larger). Stir sauce, remove from burner, drop meatballs into sauce. Cover return to burner and cook 5 minutes. Turn meatballs (removing from burner if needed to keep from getting splashed), cover and cook 5 minutes or until cooked through.
    Serve over cookd spaghetti squash.

    Tomato Sauce:
    1 28 oz can rich Tomato Sauce (I like Hunts) (if in PHASE 2 make your own by blending tomatoes and cooking down)
    4 TBS Tomato Paste (Hunts) Omit if in PHASE 2
    1 tsp Onion Powder
    1/4 tsp Paprika
    1 tsp SWEET Basil
    1 tsp Oregano
    1/2 tsp Salt
    1/4 tsp Pepper

    I am not familiar with Spaghetti squash but I Googled it and found that people cook it differently. How do you prefer to cook it?

    Thanks Mrs Spanky! Now I know what I'll be having for dinner. I'm hoping that this recipe freezes well. Would love to make in advance & reheat.

    Ginger Shrimp & Grapefruit Salad
    1/2 grapefruit
    3.5 oz Shrimp
    1 C Thinly sliced cucumber
    1 tsp dried ground Ginger (or more if you like)
    2 tsp Lemon Juice
    1/4 tsp Vinegar (ACV)
    Pinch of tarragon
    Truvia or Stevia to taste

    Steam shrimp and let cool. Cut grapefruit into one inch pieces. Combine all ingredients, toss to coat. Cover and chill 30 to 60 minutes. Stir gently before serving.

    Options:
    *P2 omit cucmbers annd serve over alotted amount of lettuce.
    *P3 make above recipe and serve over lettuce.
    *When allowed replace ACV with white wine vinegar or omit tarragon and replace with tarragon flavored white wine vinegar
