I can't seem to figure out phase 3. I am VERY careful about what I eat and haven't cheated but I am up 5 lbs. The first day I went up 2 lbs, then I was down 1/2. Then the 3rd day I was up 4 1/2 lbs. I did a steak day and went down 1 lb and stayed there for 3 days. Then today I was up 1 lb again for a total of 5! I did a steak day today but I was VERY weak! I waited until today to do the steak day because I am a teacher and I had to move my classroom in 4 days before school started and had to have some energy. An example of my diet is Breakfast: 2 eggs with cheese sprinkled on them, cooked in 1 T butter. 1 cup skim milk. Lunch: bacon, cheeseburger (no bun) green beans Snack: 1/4 cup roasted almonds Supper: spinach and tomato fritatta (made with eggs, cheese, tomato, and spinach) occasionally I would have some no sugar added ice cream (Blue Bunny brand)
I am drinking all of my water every day.
Can someone help me? I also drink a sugar free latte and drank them during phase 2 with no problem.

The first thing that I see is the skim milk, you shouldn't really be drinking milk but if you do it should be whole. Whole milk has more fat and added sugar, while skim milk has a lot of added sugar. Also, that sugar free ice cream probably has a lot of additives like malitol that you might be reacting to. Also, some people have problems with almonds. Also, is the bacon sugar and nitrate free?
I agree with Birrdie on the milk - skim milk is pretty much all lactose sugar with no fat to stop the absorption into your blood, spiking your blood sugar. And then your body stores that sugar as fat. It could be a big part of the problem.
Also, the almonds, the ice cream... :(
I'd eliminate the skim milk and drink whole milk or even half and half, maybe hold off on almonds until you get back to within the 2lbs of LIW, and make homemade ice cream instead. :))
You'll be ok, Just make some changes now, do some high protein days and I bet by this time next week things will be calmer.
Also could be the eggs and cheese. What kind of cheese is it, are you shredding it yourself? I had trouble with orange cheese and shredded has starch in it. I have a lot of trouble with p 3 too. It's harder than p2.
I have been through similar things in P3, and I am a teacher too, who needs energy for certain days. I didn't have quite the weight flucuation that you do, but I have had to do steak days, and I am 2 or 3 lbs. over LIW usually. I really need to cut out the almonds myself, I just ate a handful of the roasted kind, and immediately felt a bloat afterwards. so I know the feeling... I am also going to do a few high protein days and see how it goes, I don't drink milk though.
Thank you! I wish Dr. Simeon would have gave some more directions for phase 3 because it is hardly eat anything you want that isn't a starch or a sugar. Who knew skim milk had sugars in it? Sheesh! Any suggestions for high protein day? Can someone give me an example of what you eat?
I didn't know you couldn't do 2 steak days birdie. Susiebelle everyone is right...stay off the almonds, eggs, milk, ice cream. When you get back down to your weight, start adding eggs for a few days if everything is ok then almonds for a few days etc.... I would do the milk or ice cream or regular bacon....like birdie said it has to be sugar free. I have not found any yet without sugar. Good luck I hope this helps.
