I cut up my cucumber and leave em in a container so there ready 4 me when I go to eat them. I realized that in "Pounds & Inches" he doesn't say how much equals one veggie, so I'm assuming its one cup equals a serving of veggies...is this correct??

I just eat whatever I want of the veggies. I always ate at least a cup, sometimes more.

In the 101 Cookbook, most of the time it states that 2 cups of veggie is a serving.

Bananas, I didn't restrict lettuce, spinach, celery, cabbage or cucumber. I was more careful with asperagus, all fruit, tomato. Barb

My clinic told me that a serving was the size of your fist. So that is what I have been going by.
