I would like to have a place to look for recipes and share some things that I think taste really nice. I'm in my first week of this and a few of the things I have made were pretty good, almost felt like cheating : )
I will get together some of the things I have made so far and post them when I get a chance as well as new things I learn along the way.
My favorite has been the baked apple with lemon juice and cinnamon. I add a tiny bit of Truvia too even though it's controversial on p2. Anyway, I love this treat!! Feels like a cheat to me everytime!
I've said it before and I'll say it again: I love the crunchy, dried apples you can buy at healthfood stores. Make sure the only ingredients listed are "organic apples". If it says "organic apples, cinnamon" that's ok too.
5-10 oz chard 1 1/2- 3 cups water 1T italian seasoning dash or 2 salt dash or 2 pepper 1/4T garlic powder 1/4T onion powder Simmer on med. until chard is soft
I like to drain the juice before I eat it my husband likes to drink the juice... lots of nutrients cooked off the chard. you can also add a protein the the mix and cook it in the juice
Celery Salad 1/2 orange(2slices for juicing & the rest chopped up and mixed with celery) 1-2 c celery Dressing: orange juice 1/2teaspoon ground ginger 1T cider vinegar 2Twater
Note: you can increase the amount of dressing and add it to the celery and chopped orange and let it sit in the fridge over night.
I put most of my sauces and dressings in a small blender to mix, although its not a must
I am almost done with P2 R1 but just had an awesome dinner tonight. Strips of lean beef stir fried in garlic, onion and southwestern seasoning (watch your ingredients on these...I used Emerils) Then I added some pico de gallo and tossed with lettuce for a YUMMY salad!
I did strips of beef also but I used chopped garlic and ginger, a small amount of vegey broth, a little rice vinager, added brocolli and 1/2 an orange I used 1 1/2 oz of Walden Farms Asian dressing finished the other 1/2 orange for dessert ate with chop sticks almost like takeout but healthier! yummo

Chop 2 cups cabbage 1/2 apple chopped Vinigrette dressing celery salt salt/pepper small amount of mustard, depending on how you like Maybe a little lemon juice 3 oz shredded or chopped chicken.
Mix all together. I didn't put amounts on the spices because I just added until I liked the taste!
