    P4, but I'm trying to avoid sugar and starch as much as possible. It's going to be a HARD week, as I have my daughter's 7th birthday party this weekend, and I know I'll have a piece of cake & drool over the leftover =( THEN... Thanksgiving feast time! I would love to make a gluten-free non-sugar sweetened cheesecake. I'm a horrible cook, so that's why I said "simple" hahaha! Thanks in advance!

    Question...

    1/4 cup Finely Chopped pecans
    1/4 cup Finely Chopped almonds
    1/4 cup Finely Chopped walnuts

    How do you finely chop these things? Do you think I could substitute with more almond flour? =/ Like I said, I'm so not a cook!

    give them a whirl in a food processor. but don't leave it on- just give it short bursts (otherwise you'll end up with nut butter!). or just use a large french chef's knife, and keep rocking it over your pile of nuts. don't know if you could substitute almond flour or not. you might need the pieces a bit larger than what they would be in the flour.

    I just put all of them in a big ziplock and rolled over them with a rolling pin. Worked like a charm. You def need the nuts inthe recipe for the texture..I made this 3 days ago and it tastes better every day. Yesterday I took some of that chocolate sauce that I made for the mug cake and drizzled it over the top. It was fabulous! It would be great for Thanksgiving

    amy, just follow all of the tips, etc in the recipe exactly (for instance, make sure the cream cheese is at room temp before beating and don't use high speed to mix the ingredients). Look, you have mastered the HCG diet. You can do this too! It will be worth it to have a treat for Thanksgiving.

    Thanks Deb, for the encouragement lol! ;) And the chocolate sauce over it... OMG... sounds FANTASTIC! I guess I need to buy a food processor or rolling pin! I don't do butcher knives hahaha! Is it sad that I don't own a food processor or rolling pin!? I'm soooo going to do this!!! =D EXCITED.COM!

    amy, you can use a heavy glass and pound the nuts when they're in the bag too. Or use a wine bottle as a rolling pin..
