    I made a batch yesterday and they didn't turn out too great. Is there somebody who can give me some advice? :)

    I've made them..how are you making them? I use a stainless steel container and then put the egg whites in and cream of tartar and beat them till you can turn the bowl upside down and they don't move...then in a seperate bowl, I mix the cream cheese and yolks, and then very slow add that into the egg white mixture. Then I have a muffin top pan and I bake them in that. Then let them sit on a cooling rack for a little while. Also where do you live, I've heard that places where it is more humid tend to have more trouble making them. I live where it is very dry and don't have much problems at all. Also I use one of those hand mixers and it works great!

    I think what happened is I didn't use enough cream of tartar. The recipe I have is for 3 eggs, not 6, and it says "a dash" of cream of tartar. I don't know what a "dash" is. Lol How much do you use? I beat mine FOREVER and it just went foamy. They tasted good, but they were completely flat.

    Hmm..yeah maybe you do need some more of cream of tarter. I only use 3 eggs also. I just sprinkle it in there but if I think it needs more than I add a little more. Maybe try it with more and see how it does! They are actually pretty good if you can get them to the right consistency

    Okay, I did a search on "oopsie rolls" and only came back with this thread. So what are they?

    kerbear- I sprinkled, and I'll bet I ended up with at least 1/2 Teas. I wonder if anyone has actually measured?? Lol I'm not a measurer myself, but when something goes wrong I'd like to know why.

    oopsie rolls are basically a low carb roll that you can use like a bun for hamburgers or sandwiches. They are just made out of eggs and cream cheese. It's nice to have it when you know you can't have any bread.

    Ok, I just found this other recipe that says "1/8 teas" so I'll measure that out and see if I have to add. I will update my findings!
    TLM - Here is the recipe. They turn out like a little pastry.

    3 large eggs, separated
    1 tsp baking powder
    1 pkg Stevia or SweetNLow
    1/8 teaspoon of cream of tartar
    Dash of Salt
    3 ounces cream cheese (not Tbsp!) DO NOT SOFTEN!

    Preheat oven to 300 degrees.

    Separate the eggs and add Stevia or SweetNLow, salt, and cream cheese to the yolks. Use a mixer to combine the ingredients together. In a separate bowl, whip egg whites and cream of tartar until stiff (if you're using the same mixer, mix the whites first and then the yolk mixture). Using a spatula, gradually fold the egg yolk mixture into the white mixture, being careful not to break down the whites. Spray a cookie sheet with non-stick spray and spoon the mixture onto the sheet, making 6 mounds. Flatten each mound slightly.

    Bake about 30 minutes (You want them slightly softer, not crumbly). Let cool on the sheet for a few minutes, and then remove to a rack and allow them to cool. Store them in a bread sack or a ziplock bag to keep them from drying out.

    If you mix the yolk mixture too much, the rolls will be flat. The yolk mixture should be a little chunky. If they turn out flat, they are still yummy! You can use them as pizza or strawberry shortcake!

    Makes 6 @ about 85 calories a piece, >1 carb per

    I still haven't mastered making these at all. Mine always turn out flat. It just seems to take so darn long to get them whipped up to the right consistency, and not to fall when the rest of the stuff is folded in. Maybe it takes culinary talents I just don't have!

    haha Yeah, I'm no cook myself. I mean, I LOVE to cook, but I have to do the same recipe a dozen times before it turns out like I want. My mom gets irked because I'm always changing things instead of following what's in the book. Lol I guess I'll just have to keep practicing with these.
