    I haven't tried this one yet but with the right sweetener...this sounds wonderful!!

    Sugar-Free Chocolate Fudge
    Prep: 10 min. + chilling
    Ingredients:
    2 packages (8 ounces each) cream cheese, softened
    2 squares (1 ounce each) unsweetened chocolate, melted and cooled
    24 packets aspartame sweetener (equivalent to 1 cup sugar)
    1 teaspoon vanilla extract
    1/2 cup chopped pecans

    Directions:
    In a small mixing bowl, beat the cream cheese, chocolate, sweetener and vanilla until smooth. Stir in pecans. Pour into an 8-in. square dish lined with foil.
    Cover and refrigerate overnight. Cut into 16 squares. Serve chilled.
    Yield: 16 servings.

    I was just reading through this thread. Remember that corn starch is NOT allowed in P3. It is a starch. : ) Also, do not try to make "fat free" recipes. We do not need to stay away from fats in P3. Also, you can use other sweeteners besides stevia during P3. Some of them make people retain water, so be careful, though. I like to combine xylitol and other artificial sweeteners with my P3 baking. Doesn't seem to be as much aftertaste that way.

    Where are you getting your almond flour and zylitol. We don't have mush of that stuff in our little town. Is there a site to order from?

    I got both at our local health food store. Blanched Almond Flour you can get from honeyvillegrain.com
