Crossing Fingers on Hitting Sweet Spot!

Rate this Entry
I don't want to jinx myself by saying this, but I think I may have hit my dosage sweet spot. That would be awesome for me so early in a round - VLCD 7 today. It's the first day I haven't felt a tinge of hunger after being out of bed for an hour or so. Still just contentedly sipping my coffee, not considering a celery or cucumber stick (my go-to's, subtracted from later in the day). So for that, I'm thankful.

Officially ridiculously addicted to homemade fraps. Thank the culinary gods (and my dad) for sending a Ninja my way for Christmas... best blender ever!! Thrilled that I have something I can take on the road to me that will last longer than the 15 minutes it takes hot coffee to not be so hot any more.

Down 1.1 today, a blessing. I switched up dinner last night and was worried it might stall me out. It's so so weird - I can eat nearly anything (in moderation) in any other phase and have no issues whatsoever. Yet in phase 2, I can't do cabbage, beef, strawberries, oranges, or grapefruit. So when I switched dinner from my normal lettuce and shrimp to cucumber and cod, I was crossing my fingers on no stall from it. HOORAY! Tonight will be more cucumber, but I'm going to try some Flounder. I do love fish, I just don't like having to cook it every night. I wish it kept as well as chicken does in the fridge. Yes, I know, I love to cook.. But mid-week becomes a pain with my schedule. Ah well, sucking it up starts in 3.. 2...

Thanks! I'm a huge fish/seafood fan, always have been. My general rule is that if it 'seems' or smells 'fishy', I won't eat it. That's a great rule of thumb when you're shopping for fresh seafood/fish, too - it shouldn't be fishy, or it's probably been sitting out too long. Definitely not fresh. Otherwise... I suppose some are naturally just a little fishier, just like some meats are more gamey. I don't find flounder to be especially "fishy", but that's just me. I dig it.

As far as cooking the cod, I cooked it the same way I cook everything in P2. As I said, I adore cooking - I do it all the time. But it becomes a bit of a pain when not using oils/fats because it's so easy to burn things or have everything stick. So, I use Ziploc Steam Bags. THEY ROCK MY SOCKS OFF! You can literally do nearly anything in them - poultry, meat, fish, shrimp, other seafood, veggies, even fruit (cinnamon apples, mmmmm). You can find them at Target, Walmart, grocery stores, etc. Here is a link: http://www.ziploc.com/Products/Pages...okingBags.aspx ...or you can bake them in the oven on a baking sheet lined with parchment paper (it won't stick), sautee in water or POP broth, or poach. Personally, I find the bags to be the best. They steam the food and it does not come out as if it had been microwaved. Besides, my shrimp are perfectly cooked in a minute and a half!

Flavor-wise, I cook my fish with salt and pepper (always) and often include lemon juice (during cooking sometimes, and always after it's cooked), and herbs. Rosemary & garlic powder is a good combo. Italian herbs. Lemon and dill. Rosemary and thyme. Basil, oregano, and garlic. Parsley and lemon. Whatever you like! Hope this helps!
