Cali Kicker Recipe, Coconut mousse

8 oz of water
a bit less than 1/4 teaspoon of cayenne
juice of 1/2 lemon
1 tablespoon of Braggs apple cider vinegar.
2-3 drops of liquid Stevia or 1 packet powdered stevia (the liquid worked better)

Chocolate Mousse Frosting
(or just chocolate mousse)
§ 1 can coconut milk
§ 1/4 cup plus 1 T cocoa powder
§ 1/2 tsp pure vanilla extract
§ sweetener to taste (I used a little stevia, but any dry sweetener will do.)
Open the coconut milk, and leave the can (or transfer to a bowl) uncovered in the fridge overnight. (Don’t shake the can before opening.) It should get very, very thick. Once thick, transfer to a bowl (you can opt to leave out the watery bit at the bottom of the can, if you want it even thicker) and whip in your cocoa, vanilla, and sweetener with a fork, or even beaters if you want to be fancy. Stored uncovered in the fridge, the mixture gets even thicker.



from forum: I made chocolate mousse early in P3 using a recipe found here: Coconut milk (chilled in fridge), scrape off hardened cream on top, use sweetener of choice, unsweetened cocoa, and whipping cream. I had no measurements, just winged that part. Whip until thickened. Anyway, I didn't like the coconut taste so this is what I use now: About 1 cup heavy whipping cream, approximately 1 tablespoon unsweetened cocoa, sweetener of choice to taste, about 1 cup heavy whipping cream. Then, I add about 1 tablespoon of cream cheese!...I have had this a lot on P3, whenever I get a sweet tooth. It is the best! Sometimes I make a little bit of whip cream to put on top, using a bit of vanilla extract instead of the cocoa and leaving off the cream cheese. Just experiment and find what you like. I use a hand mixer and whip until it is mousse consistency. YUM!!!!
