my version of cocoa crack

I started making this for myself and now the whole family is hooked! I make at least one batch every day.

3 tbsp. unrefined coconut oil
3 tbsp. xylitol ( I tried making it with stevia, it was terrible )
3 LEVEL tbsp. unsweetened cocoa powder
1 tsp. vanilla extract
pinch of salt
1 tbsp. whipping cream
1/4 cup slivered toasted almonds

Melt coconut oil and add xylitol. Stir until xylitol is melted. Add cocoa, vanilla and salt. Add toasted almonds. Spread on some parchment paper and put in fridge to harden. If you can't wait, put it in the freezer.

You can also add unsweetened coconut if you like. In P4 I will try it with craisins.

    Hey I used stevia and it was terrible , where do u get xylitol?

    I buy it at the health food store. I found it on the shelf right next to the stevia.

    I made it the first time with stevia and threw it in the garbage.

    I am laughing so hard bc my sister and I decided to go rogue the other day and make some and it was rancid! We literal went into fits of laughter wondering how the hek people liked this stuff but glad to know it was the stevia! I am going to get some xylitol then and give it a try.

    I made CC first day of P3, but was too full to eat any of it, so had some today for the very first time. Yep. I'm addicted now and I'm not even a chocolate freak.

    Do you, Browniepts, do anything in particular to your xylitol to 'smooth' it out or do you add it straight from the container (measured, of course)? I kinda like the crunchiness of it myself. I am sharing your blog link with the other thread I visit--because I can tell your recipe looks AWESOME! I haven't added nuts yet to my P3 repetoire yet... Day Two P3 is tomorrow so maybe I should make it cream, so I'll make tonight's batch for tomorrow with the cream and vanilla (of course, CO, cocoa powder, xylitol). YUM! And have cream finally in my morning coffee!

    If you put the xylitol in a blender with the cocoa it will get finer and blend in better with the coconut oil. Works excellent. I'm back in P2 and missing my cocoa crack.
