Love this instant gratification chocolate recipe! It lets you have a cakey or fudgey cookie any time you are restricting eggs, sugar or fats. Since its mainly protein powder and a tsp of cocoa powder, I think it could even work for P2. (Of course you should test since protein powder is not protocol on P2.)
Note: you have to use whey protein powder. (Egg protein powder might work too, but I haven't tried it.) The vegetable protein based ones don't bind the cookie together and it will just fall apart.
Makes 1 glorious cookie:
1/2 scoop whey protein concentrate.
1 tsp. cocoa powder
pinch pink salt
1 T. xylitol or other sweetener (I think a dry one would work best)
vanilla
1 tsp coffee crystals (optional---I just like mocha)
1 tsp coconut oil (can be omitted)
water - only enough to get the ingredients to form a thick batter.
Spread cookie batter on a piece of parchment or a paper plate. Microwave 30-45 seconds. 30 seconds should give you a fudgey cookie, 45 a cakey one.
Of course you can add any additions you like: nuts, sugar-free choc chips, coconut, etc. Be aware you might need to adjust cooking times as volume increases.
If you don't like the texture, try adding a tsp of pea protein powder to the whey protein concentrate. It will make it a bit more cakey.
You can also use a flavored protein powder. You might need to increase the amount and then cut the sweetener back a bit since it will already be sweet. If someone does it that way, please post a successful ratio in the comments, thanks!
FMD notes: For Parts 1 & 2, eliminate the coconut oil. I add beet root powder (heaping tsp) to this for Parts 1 & 3 to make a red velvet cookie. You can add chopped walnuts in Part 3. Yum!\
THM notes: qualifies as a Fuel Pull item, and I think its also an Ultra Fuel pull, as there is only 1 carb in the teaspoon of cocoa, and half of that is fiber.
