Not makeing my 500 Calories a Day

Help, I am having trouble making my 500 calories a day. I really really dont like the majority of the veggies on the list and without doubling up on the veggie portions I an not making it to 500 calories a day. Does anyone know if not making these calories is a bad thing. I am on day 18 of my 1st round of HCG I have to decide it I want to go for round 2 in 2 more days and I've only lost 10 lbs and been sitting at the same weight for the last 3 days. I haven't cheated and have been doing my best to get all 500 calories in a day, but I seem to be relying on melba toast to fill in my last 100. Any suggestions a welcome
