1st Time HCG for me!

P3 Make ahead breakfast muffins

P3 Egg Muffins
recipe:
6 eggs
1/2 C. half N half
pinch nutmeg
salt & pepper
3 oz. shredded cheese (I used hard romano)
Canadian Bacon
sliced Mozzarella
Veggies of your choice I mixed it up
2 cups wilted baby spinach
1 cup blanched broccoli

Preheat 350 oven
Whip eggs< half n half, and seasonings add cheese.
Grease muffin tin with Pam or butter.
I layered the canadian bacon with spinach and the broccoli cups with the mozzarella.
Cut bacon into quarters and lay in bottom of muffin cups.
Quarter mozzarella slices and lay in bottom of some muffin cups.
add some wilted spinach and broccoli to cups.DSCF3703.jpgDSCF3702.jpg
Ladle 3 T. egg mixture into each muffin cup.
Bake 20 minutes or till golden on top.
