7 Layer Taco Salad

This is a taco salad without any lettuce--but you can certainly use shredded lettuce if you like it. I'm just not a big lettuce person. I'd rather have crunchy veggies instead.

Taco Meat:
Brown 1# or more ground beef with some onion and garlic flakes. Drain after browing if fatty. (I used the package of organic ground beef from Costco. Its a pound and a quarter.)

Add taco seasoning:
1 T. chili powder
1/2 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/2 tsp cumin
1/2 tsp chipotle pepper flakes
1 tsp pink salt

Stir till meat is coated, then add 1/4 C water and cook until water is all absorbed.

Layer your salad in a glass bowl for maximum visual impact:
1 - grape tomatos
2 - chopped jicama*
3 - chopped sweet onion
4 - 1/2 avocado cubed
5 - fresh cilantro, chopped
6 - 3 oz. taco meat
7 - 1 oz shredded monterey jack cheese - it will melt on the hot beef

On the side ( or you can layer these in after the avocado, but then that would make it a 9 layer salad )
dollop of plain greek yogurt
salsa or pico de gallo

Super yummy, and very festive!

*P3 TIP: You can make the jicama more P3 friendly by soaking it in icewater after chopping for about 10-15 minutes. A lot of the starch will come out. Pour off the water and towel-dry the jicama before adding it to your bowl. I've always found jicama to be P3 friendly for me, but if you are concerned about it, you can eliminate it or replace it with bell peppers. Yellow ones would be lovely.

    That sounds great! love the idea of the cruncy jicama. Would like to take it to a cookout I am going to over the fourth! thanks

    The jicama is almost my favorite part. I also like to cut jicama upto in french-fry shapes and dip it in a sweet chili-lime sauce.
