Guacamole Deviled Eggs

Since St. Paddy's day is approaching, I thought I'd post my recipe for green eggs.

Seriously good for P3 or anytime. If the amount of mayo freaks you out, you can just use more guacamole and add a bit of vinegar or lemon to replace the acid in the mayo. But c'mon people...its P3....go for the mayo!

GUACAMOLE DEVILED EGGS

15 hard boiled eggs
1/2 small red or sweet onion, chopped
1 tsp. ground chipotle pepper
1/2C. real mayonaise
1 8-oz vacuum package prepared fresh guacamole (not guacamole dip)

OR make your own guacamole with 2 mashed avacados, garlic, salt, jalapeno and juice of half a lemon (about 1 T.)

Peel and halve eggs. Mash yolks with pastry blender. Add remaining ingredients. Fill egg white halves. (I use a ziplock bag with a corner snipped off and pipe the filling into the eggs.) Sprinkle paprika on top or cayenne if you like it zippier.

    Hi Leez, this recipe sounds amazing! Which mayo do you use? I've noticed the Hellmans brand has sugar listed. I've heard of dukes but it's no where to be found around here and amazon wants $12 for 8 oz!

    I just use regular mayo in this. The sugar is minimal unless you are eating the whole recipe!

    I bought a 4 quart pack of Duke's from their website - $22
