Hummus

A recipe good for P3 or anytime. Credits to Graham Kerr. Truly the best hummus recipe I've found anywhere. [Note: garbanzos are a caution food for P3. But you can also make this recipe with roasted eggplant or raw, peeled zucchini (suggested changes below) as an alternative.]
1 can chick peas (garbanzos) drained
2 cloves garlic
2 T. tahini (sesame butter)
2 T. olive oil
2 T. water
juice of 1 lemon
1/4 tsp salt
pinch cayenne pepper
Blend till smooth. Serve with a small dollop of ground chili paste on top and drizzle with more olive oil.
For best flavor, it's important to use fresh lemon and garlic.
This recipe works well with other beans as well such as aduki, black beans, cannellini or great northern beans.
If using raw zucchini, its best to chop and press out the extra water before blending. Also double the amounts of tahini and olive oil and add 1/2 tsp or more to taste cumin powder. The cumin adds some of the earthiness of the garbanzo beans.
