Lemon Truffles

I've adapted the original recipe to use my xylitol blend as a sweetener, and shortened up the steps some. If you want to check out the original recipe and watch a video on how to make them, here are the links:

LEMON TRUFFLES - the Leez variation:
1 tsp lemon zest
juice of one lemon
pinch of pink salt
4-5 Capella Vanilla Custard flavor (optional---I just think it makes it even richer)
1 T. powdered xylitol/stevia blend (see my Make Your Own Truvia post) if you use just xylitol, you'll likely want to increase that some.
1 cup Coconut BUTTER (Artisana brand) or Tropical Traditions brand “Coconut Cream Concentrate” [I've found that the Nutiva brand doesn't work as well for some reason as the above. Maybe because I got it at my regular grocery store. Who knows how long it was sitting on the shelf there.]
If coconut butter is not easily stirrable, microwave til softened but not liquid-y, and give it a stir.
With a wire whisk or fork, blend in in zest, juice, salt, flavoring and xylitol blend all at once.
Mixture will thicken rather quickly - I think the lemon juice must react with the coconut butter somehow, because there is a definite texture change that happens. You should be able to form small balls at this point, although they will be soft.
Roll the balls in dried coconut flakes and they are ready to eat or refrigerate a short time for a little more stiffness. But if you refrigerate them until hard, its worth the time to bring them back to room temp before eating them. Just amazingly good that way.
NOTE: to powder granulated xylitol or erithritol, blend in a coffee/spice grinder or a small nutri-bullet until the consistency of powdered sugar.
Also, you can make your own coconut butter: Process dry unsweetened coconut flakes in a Vitamix, blender or food processor until it liquifies and gets creamy. It could take 6-8 minutes, so don't think its not working when it doesn't happen right away.
