P3 Avocado ice cream

One of my favorite ways to get avocado goodness into P3 eating. Makes two good size servings. Freeze the second one and to restore to creaminess, microwave 30-60 seconds, break into chunks, microwave 30 seconds more and then stir until creamy and smooth again.

Best made in a VitaMix or other powerful blender. Start it on HIGH and use your tamper until you hear the blades running smoothly and you get that clover-leaf formation in the container. (My machine ususally shuts itself down right after it gets to that point.)

P3 weeks 1-3
1 avocado
1 C plain greek yogurt
6-8 oz frozen fruit chunks (peaches, oranges, berries, pretty much any fruit you like)
2-4 scoops xylitol ( I use a xylitol/stevia extract blend)
pinch salt

P3 weeks 4-6
(sweetener is replaced by bananas)
1 avocado
1 C. plain greek yogurt
2 frozen bananas
6-8 oz some other fruit (can be frozen or not)
pinch of salt

Sweetness is good for me, but if you like it sweeter, you can add extra sweetener to your taste.

Good enough for company
If you want to play up the greenness of the avocado, try using kiwi and some pineapple chunks as your fruit. Blend in or top with pistachios for a triple green whammy.
