P3 Cheese Lace (better than cheez-its)

CHEESE LACE / TACO SHELLS
Great combination with a crisp apple.
12 inch non-stick skillet
2 oz. shredded sharp cheddar (or any other hard cheese you like)
paper towel
That's it!
Sprinkle the cheese shreds evenly in the skillet. Cook on high until the cheese melts and a slick of oil starts to appear on top of it. Here is the trick that makes it addictingly crispy: Once you see the oil and a bit of browning has started to happen, take a paper towel and blot the oil until you've gotten most of it removed. If some cheese sticks to the towel, you haven't waited long enough to start the blotting process. Once the oil is blotted up, you should be able to loosen with a spatula and lift the cheese lace from the skillet. on to a paper plate. It will be a bit pliable for a few seconds before crisping up.
I love this recipe because it is so simple and quick. Its instant snack gratification, and the combo with the apple is that sweet/salty thing that we all love.
Variation: Use a small skillet (6 inch) and then bend these while still warm to make taco shells.
