Pea Protein cookies - for when you are meat-ed out on P3!

These make a great breakfast. Don't you get tired of eggs and meat for breakfast? I do.
PEA PROTEIN COOKIES (my version- makes 6 cookies):
Pea Protein (I use the unflavored NOW brand-- 24 grams protein per scoop, no carbs, no fat)
1 ripe banana (you can substitute avocado--just add some sweetener and leave out the other fats)
1 scoop pea protein powder
1/2 scoop golden flax meal
1 tablespoon of almond butter, pumpkin seed butter, or coconut butter (THM variation: 2 T. peanut powder)
a few raisins
vanilla
nutmeg
Using a fork, blend all the above ingredients together.
Bake as small blob on a cookie tray or silpat and press them down with a fork to flatten them. Then, bake them at 180 C (350 F) for about 25 minutes, or until they look golden on top and are cooked through.
(THM variation: use the banana, and sub 1/4C. peanut powder for the butter. Half recipe is one E serving with 2.5 grams fat from the flaxmeal)
I think the banana and raisins make it sweet enough, but if you don't agree, you can try the original recipe, or create your own variation.Note about pea protein: I like it because it has a neutral flavor and is powdery like flour.
