Picante Salsa

Rate this Entry
The best recipe I've ever found for homemade salsa. Thanks, Ann!

This is great for FMD phase 1, or if you don't mind mixing veggies, as a condiment for HCG Phase 2...since there is no oil or sugar needed. If you still have some garden tomatos to use up, you can make a huge batch and freeze any leftovers (good luck) to use later as a mexican pizza sauce. Top your pizza with jack cheese and experience the yum.

PICANTE SALSA
1 medium to large sweet onion
5-6 large ripe garden tomatos, diced
4-5 garlic cloves
4-5 jalapenos (if large, 2 or 3 is enough)
10-15 sprigs cilantro (a bunch)
6-12 oz. can tomato paste (judge by juiciness of tomatoes, you may not need any)
1 Tblsp. sugar (substitute equavalent sweetener of choice)
1 tsp. salt
4 Tblsp. red wine vinegar (I like Progresso)
2 Tblsp. dried cumin
2 Tblsp. dried chili powder
1 Tblsp. dried coriander

Chop all produce in food processor except tomatoes. Add condiments and mix well. Adjust seasonings. And no, it's not a misprint--you do need that much spice! Its what makes the flavor of this spectacular. You will quickly get addicted. I can seriously eat the whole recipe my self in two meals.

Substitutions if you can't get fresh everything:

tomatoes: 1 large can Petite Diced tomatoes (Hunts)
cilantro: use 1/2 cup dried cilantro, or use fresh parsley
jalapenos: can use jarred, to taste

Dippers for FMD: Beanitos, jicama slices, or use as a protein topping on Phase 1.
