meatloaf, walden farms ketchup, and loss!

Rate this Entry
Boyfriend and I last night were dying for something 'hearty', so we used the meatloaf recipe from my favorite hcg cooking blog

We also used Walden Farms Ketchup instead of making some, it tasted great!

If you make this recipe I highly recomend cutting the spices down unless you really like the flavor of basil and oregano. I made 16 oz of meat and tripled the spices, I think I would reduce them further, too. But, for the sake of honesty I will post her recipe in her original form:
Mini Meatloaf

3.5 oz ground beef
1 Tbsp bread crumb
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp oregano
1/2 tsp basil
1/2 tsp prepared mustard
1 Tbsp P2 Ketchup with a couple of drops of liquid stevia mixed in
Salt/pepper to taste

Preheat oven to 350. Combine all ingredients and form into a small meatloaf. Place on small baking pan and bake 15-20 minutes or until almost done. Spread P2 Ketchup (I would add liquid stevia again) on top and bake 5 more minutes. Serve with additional ketchup for dipping.

Yay! You're making steady progress. I totally commend your choices at your retreat. I'm not sure I would have been able to salvage something that close to protocol if I were in the same situation. It's not perfect, but it could have been far worse.

I'm definitely checking out this cooking link! I've primarily pulled from the Tammy Skye cookbook. I'm not much of a chef but I've found that I enjoy it when it's new and it's following a recipe. That somehow makes it more fun. Thanks for the recommendation! New resources are always awesome.

I am impressed with your progress. You should be so happy with such daily large losses. I may have one day every week where I lose 1 pound, most days are .2, .4, .6.
Keep up the determination and hard work!
