Whole Wheat Bread Information

This is made in my Bosch, but should work with any heavy-duty mixer. Makes the equivalent of 4 loaves of bread or 32 rolls.

3 1/4 C Hot water
1/2 C oil (I use light olive or coconut)
1/2 C honey
4 C whole wheat flour
2 T gluten
1 T dough enhancer (optional)
2 T yeast (add one more tablespoon for cinnamon rolls)

Mix and let sponge for 15 minutes. (Watch this - it can really grow and bubble out of the bowl. Stop it before it does that!! )

Then add:

4 - 5 C whole wheat flour
1 T salt

I add this as the mixer is on low. Just enough flour that the dough pulls away from the side of the bowl. It will still seem a little tacky - not sticky, tho. Then knead the bread on level 2 (medium) for 5 minutes. No more than 5 minutes - or it will be tough.

I usually use "Pam" type spray on my bread pans and get the cooking sheets ready for the rolls while this is happening.

Split the dough into 4 equal parts - and keep the sections you aren't working with under a towel so they don't dry out. Throw the dough section you're working with out onto a counter that has been greased (grease your hands good, too) Bang it (hold it up and forcefully drop it) on the counter and squish and tuck in the sides 7 times - you need to get the bubbles to pop, so there aren't any gigantic holes in your bread.

Shape into loaves or rolls. Let rise for 30 minutes to an hour, covered with a cloth.

Bake at 350 degrees for 30 minutes. Remove from the pans immediately - can brush with butter or oil on the tops to keep the crust soft.



You can add one or some of the following after the sponging -
1/2 C millet
1 C rolled oats
2 T poppy seeds
2 T sesame seeds
2 T flax seeds

My recipe for great Italian bread!
Add -
2 T oregano
1 T basil
1 T onion powder
1 T dill

The recipe I use for my Zojirushi Bread Machine
1 1/2 C warm water
1 T oil
3 T honey
3 2/3 C whole wheat flour
1 1/2 tsp salt
2 heaping Tblsp gluten
2 heaping tsp yeast
