Dill Chicken Salad

1/2 cucumber
1 stalk celery
3.5 oz chicken
1/2 tbsp dill weed
1/2 tsp mustard powder
salt (opt to taste)
1 tbsp lemon juice
1 medium orange
1/4 tsp chilli powder
Finely chop celery and cucumber
add dill weed, salt, 1/2 of the tablespoon of lemon juice
set aside in fridge

Cube 3.5 oz chicken (small) put in a small skillet on med-high
add 2 tbsp water to keep chicken tender while cooking (you want a small amount of liquid in pan while cooking chicken)
add mustard powder- 1/2 tbsp lemon juice - 1/4 tsp chilli powder
When slicing your orange, keep the end to squeeze 1 tbsp orange juice onto chicken. This will cook down into a natural sugar off setting the lemon. Combine chicken and 3 tbsp of liquid it was cooked in into bowl of veggies you set aside. Mix, chill, enjoy.

side note: the chicken needs to be cooked down where very little liquid is left in pan. The flavor will be concentrated into this liquid and will help with dressing the fresh veggies.

Eat with orange slices. You can opt to cut up orange into the salad. It is a great pairing with this fresh salad!100_6063.jpg
