Chocolate Chip Cookie in a mug

Chocolate Chip Cookie in a Cup

1 Tablespoon Butter
1 packet powdered stevia
1 tsp xylitol
tiny splash of Vanilla Extract
Small Pinch of Kosher Salt
1 Egg Yolk (discard the egg white)
3 T almond flour
2 Tablespoons of Semi Sweet Chocolate Chips

Start by melting your butter in the microwave. Add sweeteners, vanilla and salt. Stir to combine. Separate your egg and add the yolk only to your cup. Stir to combine. Add flour, then stir again. Add the chocolate chips, and give a final stir. Cook in microwave 40-60 seconds, start checking for doneness at 40 seconds.
Serve warm.

    Yummers!!! I wonder how it would come out if you used cocoa crack "chips" instead? I can't until I'm able to try this.

    Oh, great idea! I have some in the freezer - I'll have to try that tomorrow. I felt kind of guilty over the 5 grams of sugar in the chocolate chips I used.

    I tried this with 1T coconut flour and about a tablespoon of chopped cocoa crack (really I use Chocolate Covered Katie's three-ingredient chocolate bars, which is honey, cocoa, and coconut oil). It was good, but dry and the chocolate didn't hold up like semisweet chips do. I'll try less flour next time or may use a whole egg instead of just the yolk. It seems so wasteful to pitch the white!
