I absolutely am in LOVE with this recipe. I could eat this a few times a week regardless of what phase I'm in and be quite content. Note though that coconut aminos is not p2, but it's a nice alternative to Braggs liquid aminos which has soy and can cause gains/stalls with some folks. I haven't had a problem with coconut aminos though. You can always substitute ACV if you want to stay completely OP.
Chinese Chicken Cabbage Rolls
3.5 oz. chicken breast
1 tsp. fresh ginger
handful of cilantro
1 clove of garlic
Green napa cabbage (two leaves)
lime
red pepper flakes
5 spice
salt/pepper
coconut aminos (or ACV if you want to be POP)
Optional: miracle noodles
Put chicken breast (uncooked), garlic, ginger and 3/4 of the cilantro in a food processor. Pulse until not pureed but chunky enough to create a nice filler for the cabbage. Put water in the bottom of a skillet, heat up, and sautee chicken mixture. Add pepper flakes, 5 spice, a bit of salt and pepper, squeeze of lime. While this is cooking, steam your cabbage leaves so they are soft for rolling.
Side note: If you are wanting to do a bit of miracle noodle for the inside of the wrap, rinse them well first. They will smell fishy, so rinse with cold water. Then boil (not to mush though), and put on a paper towel to dry. Take about 1/4 of a package and throw it in the pan with chicken mixture while it's about halfway done (don't want to overdo the chicken). you can precut the miracle noodles so they are easier to handle when spooning mixture in leaves.
Remove the cabbage leaves and lay on paper towel to dry. Cut the leaves in half. You should have four rectangular pieces now. Divvy out the chicken mixture in each of the leaves. Sprinkle a bit of cilantro, squeeze some lime and put your aminos (or avc) on the mixture. Roll up each roll and plate.
A few more steps with this recipe but well worth the time and effort. Bon appetite!
