Hey all!

It's great to see everyone doing so well in body and spirit!

I spent a good part of the day in the P3 thread and gained a huge amount of information about what to do, some fantastic looking recipes, etc. and I thought I'd share one recipe that should satisfy my fellow bread loving friends (Val LOL).

They're called Oopsie Rolls and extremely P3 friendly!

Oopsie Rolls (a P3 recipe)

3 large eggs, divided
3 oz cream cheese (do not soften)
pinch of cream of tartar 1/8 teaspoon

Preheat oven to 300 degrees F

Separate the eggs and add cream cheese to the yolks. Using a mixer to combine the ingredients together. In a separate bowl, whip egg whites and cream of tartar until stiff (If you're using the same mixer, mix the whites first and then the yolk mixture). Using a spatula, gradually fold the egg yolk mixture into the white mixture, being careful not to break down the whites. Lightly spray a cookie sheet with non-stick spray and spoon the mixture onto the cookie sheet, making 6 mounds. Flatten each mound slightly.

Bake 30 minutes (You want them slightly softer, not crumbly). Let cool on the sheet for a few minutes, and then remove to a rack and allow to completely cool. Store in a loosely open sack and allow to rest on the counter before use. (Otherwise they might be too moist). They can be frozen.

NOTES: If you are making these to be savory (for burgers) you can add dry mustard and dill or other seasonings to the yolk mixture. If you want a more sweet roll, add a very small amount of stevia (or other non-sugar sweetener) to the yolk mixture. Try laying them out in a tubular shape on the pan. poke a hole through with a skewer. When cooled, fill with whipped cream and top with chocolate mousse for an eclair. If you like creme puffs, then don't flatten and again, poke a hole through the side with a skewer. When cooled stuff with whipped cream.

Makes 6, Gluten Free rolls

You can use for burgers, hot dogs, dip in egg/spices/cream & grill up for french toast, cover w/ strawberries & whipped cream....the possibilities are ENDLESS. They are light and fluffy

I am so making these this p3, probably this weekend for next week. I miss bread, the feeling of a sandwich on p3. If this recipe works, and makes a suitable substitute then I'm good to on p3 for a long time. Thanks.
