Broccoli for lunch - YUM (Recipe included!)

Rate this Entry
Feeling rogue again, but I think it's permissible in R2. I learned in R1 where I could and could not cut corners, and I am in heaven, feeling much less restricted and much more prepared. It's good to KNOW that a week from now, I will weigh at least 5 pounds less. And two weeks from now, I will weigh 10 pounds less, at least!

So I thought I would share the recipe that made me go from absolutely hating broccoli to not getting enough. And to know that it barely registers on the list of "no-no's" is even more exciting to me (I will be eating this recipe daily long after HCG is a distant memory). This is what I use as a sort of dressing for my broccoli:

1 can of Cream of Mushroom Soup (98% Fat Free)
1 TBSP lemon juice
1/2 tsp dried basil leaves
1/8 tsp garlic powder
1/8 tsp black pepper

I use about 2 TBSP-1/4 cup per cup of broccoli, and I make the can of soup last about a week (shelf life of an unopened can appears to be 4 days). The scale will tell me if this is okay for P2 - but I think it is most appropriate for P4 (maybe P3, too - where I drank a LOT of milk). If I can make my own cream of mushroom soup, I will be stoked; I've never tried.

So, I am taking my HCG at 7:30 and 1:30, and eating at 11 a.m., 2 p.m. and 6:30 p.m. I eat lunch at 11 a.m. and snack at 2 p.m., with dinner at 6:30 p.m., generally (at least in those intervals). I'm a blogging fool - if you stop in, be sure to say hello (:
