R1P2 Day 38 (18 more days until P3)

I love Carol Ensminger's "5 things I love" vlogs on YouTube.

One of the things she does w/ Cocoa Crack that I am so looking forward to trying:

Get some candy molds that are circles and deep enough to make a "homemade reeces PB cup". You make your cc, pour just a bit on the bottoms, freeze it until it hardens, then fill the middle (filling) part with either a nut butter, or cream cheese mixed with peppermint Stevia (OMG YUM!). Then pour over the filling middle part with the remaining CC, and freeze. I love dark chocolate and I love dark chocolate and mint together. Drool fest! Imagine eating these decadent candies without the guilt!

*Light Bulb! You could replace the nut butter filling with PB2 to cut down on fat. hmmmm

Damn it. I just checked http://www.bellplantation.com/ PB2 has 1g of sugar in it. Srsly!? grrr Boo

    Yum-O. What recipe do you use for your cocoa crack? There are so many variations.

    I tried cocoa crack one time and it was more like a cocoa mush. It tasted good but there was no cracking going on.

    Thanks for turning me on to Carol Ensminger. I've seen a few YouTube channels for HCG but none like hers. But I will say that I disagree with her on weighing everything. If I had to do that I wouldn't survive. I'm too lazy :-D

    But I added cinnamon (b/c i love it and it's a metabolism booster). But I can't taste it the coconut is too over powering.
    I also used unsweetened organic coconut flakes that were steamed and are 40% less fat. $3 at Whole Foods.

    So good!

    Oh and I cut back on the cocoa powder and throw in a bit of Carob powder. Makes it more chocolatey. Basically just experiement to your liking. I showed the ingredients on a video but I'm too lazy to upload and post it. lol
