Current round food inspo

I'm updating my blog this round with some of my go-to P2 meals. It helps to look back on previous rounds what I was eating and it also might inspire any readers who are looking to pick up some P2 meals. If I can edit this post I'll add some pictures when I remember to take them!

Note: I use MCT oil when sautéing food, it's not on protocol so if you want to be strictly POP then use some liquid stock instead.


I have these two at the moment pretty much on rotation:


Dirty Beef
500g lean beef mince
1 beef stock cube in a cup of boiling water
Half a cabbage, chopped into 'rice' or smallish pieces
1 tablespoon of chermoula spice (has smoked paprika, cayenne, dried onion, coriander and cumin seeds, turmeric, dried parsley)
1 tablespoon chopped garlic
Splash of MCT oil
Salt and pepper
Konjac noodles (chopped)


I heat the MCT oil and sauce the garlic, then add the ground beef and stir until coloured by the heat.
Add the cabbage and stir to combine.
Add the stock and stir (add more hot water if needed), then add the chermoula and rinsed konjac noodles (I don't always use the noodles tho).
Simmer for 20 minutes or so.
Season.


I then weigh the lot and divide the weight into 5 portions.

Chicken Italian style
100g raw chicken breast or tenderloin - cut into pieces
1 cup of button mushrooms
1 cup of cherry or grape tomatoes (I use these as one of my allowed 'fruits')
Salt and pepper to taste
Half a teaspoon of dried oregano
2 tablespoons of chopped parsley
2 tablespoons lemon juice
Splash of MCT oil


Heat MCT oil and add the garlic.
Add chopped mushrooms and sizzle until nearly cooked.
Add halved tomatoes and cook for a couple of minutes.
Move vegetables aside in the pan and place chicken pieces in pan, cook and turn until done.
Add seasonings over vegetables and give it all a good stir.
Add lemon juice and chopped parsley and serve.
Makes 1 portion.


This one I do once in a while:


Garlic Prawns
100g prawns (shrimp) - I used raw peeled and frozen (defrosted).
1 dessert spoon of chopped garlic (or to taste - I like mine garlicky.)
2 tablespoons of chopped fresh parsley
Half a teaspoon of chilli flakes
Juice of one lemon
Salt and pepper
Splash of MCT oil


Heat the MCT oil and cook the garlic and chilli flakes.
Add the prawns and cook until pink, moving them around the pan.
Add lemon juice and heat up.
Sprinkle with the chopped parsley and take off heat.
Season.
Makes 1 portion.
I usually do a side of a steamed vegetable. You could also add konjac noodles if you want more bulk/texture without the calories.

I also go out to lunch each Sunday with DH and I order a plate of Sashimi. Helps me feel somewhat normal and is a bit of a treat tbh.
