I just made the most insanely rich chicken curry, like something you'd get at an indian restaurant:
6 sliced mushrooms
1/2 onion, sliced
1 chicken breast, sliced in strips
1/2 cup coconut milk
tumeric, cumin and curry powder to taste
finish with coconut oil to taste.
I just browned the top three ingredients in CO. Added the Coconut milk and spices and let it cook down to a HWC consistency (used Goya coconut milk that doesn't have thickener or stabilizer).
Once it's cooked down, add about 2 tbl of CO (or to taste). It thickened up even more and was SOOOO rich. Next time I'll use a bit less CO just because I couldn't manage all the sauce with that much CO, but for you CO fanatics, you'll love it!
