    Question Birthday Cake Substitute?

    I will be in phase 3 and I have someone coming over for brunch and I've just found out it is her birthday. Before I knew it was her birthday I was planning to make some coconut bread and whip some fresh cream sweetened with stevia along with some unsweetened prune spread which would all be ok for p3. But now that I know it's her birthday I wouldn't mind making the whole coconut bread load look like a cake. But how would I ice/glaze it to decorate it? I know of using coconut butter and raw thick honey but the honey isn't really on protocol! What ideas do you all have to decorate the top and do you have any other ideas to substitute for a birthday cake?

    You could ice it with whipped cream.

    Thanks grammy. I think I will bake the coconut bread (which can be pretty dry when I make it) and then cut it in half and put the date spread and whipped cream in the middle of it, put the top back on and ice it with coconut butter & honey frosting. We have loads of little native violets growing in the garden so I will cover the top of the frosting with them and put a candle in it, I think it will look really pretty. The size of the cake (coconut bread) is only really small too, maybe only a 1/3rd the size of a regular cake tin. I dont' have to eat the frosting with honey in it but I'd like a bit of variation if I'm going to put the cream in the middle to break up the dryness. Yummmmy

    Dates aren't good in P3 though. They are way too high in sugars. But your friend could eat it.

    The date spread is just dried dates, no added sugar or artificial sugars. I'm not worried about the amount of sugar I will be eating in one slice of coconut bread with a smidge of date spread on it, I'd say it would be 1 or 2 teaspoons of date spread on one piece of cake. I can't imagine it would be anymore natural sugar than the sugar I'd eat in 2 fruit serves a day. Both my friend and I will be eating it

    How about a coconut flour chocolate cake sweetened with xylitol using unsweetened dark chocolate. Top with fresh whipped cream.
