    Lightbulb P2 Sweet Treats

    I have such a sweat tooth, and having sweet snacks during P2 is definitely a saving grace. I have a couple recipes that really satisfy my craving..

    1) Broiled Grapefruit
    1/2 grapefruit
    cinnamon
    Stevia
    Take a knife around the inside peel of the grapefruit so that it cuts out the grapefruit from the peel.
    Separate the sections and place in a bowl. (It's best if the grapefruit is really juicy. If it's not, sprinkle with a bit of water to moisten.)
    Sprinkle with stevia and cinnamon.
    Mix it really well so the pieces of grapefruit get covered in their juices,stevia, and cinnamon.
    Place back into the peel
    Broil for about 3-5 mins until carmelized
    YUMMY.

    2) I just tried this one tonight actually, And love it, i'll have it again tomorrow .
    Strawberry Sorbet

    - Allotted amount of strawberries
    Juice of 1 lemon
    Stevia
    water (if needed)

    Blend fresh frozen strawberries, lemon juice & sugar substitute in blender until very well blended.
    You can serve immediately or place in freezer to allow it to firm up even further.

    3) I made this one up myself..
    Chocolate Strawberries
    - Alloted amount of strawberries
    - piece of Chocolate Delight

    I used slightly frozen strawberries and put a piece of chocolate delight on them, and put them in the microwave until the strawberries weren't frozen anymore.
    Then I mixed it up to get the chocolate to really melt and cover the strawberries.

    What are your recipes to satisfy your sweet tooth ?

    If you're craving chocolate you can have this (although it's not on protocal, I think most people can eat a little each day and still have good losses, it worked for me ), It's kind of bitter, but it satisified my need for chocolate.

    1 Cup cocoa
    1 Cup Coconut Oil (melted) (make sure you get organic virgin)
    8 packets of Stevia
    and you can also add flavored stevia to make it cool flavors (like peppermint)

    I halved this recipe and it last me a few days, I poured it into ice cube trays (but only a thin layer, like.. half an inch) and then you put it in the fridge =]

    Chocolate Mug Cake

    I've been a long-time creeper on these forums, but I found a great recipe and just had to share!

    Chocolate Mug Cake
    1 egg
    3 tsp stevia/truvia (or 6 packets)
    1-2 Tbsp. cocoa powder (depending on how chocolatey you like it)
    1 standard-sized mug

    In you mug, crack the egg, add sweetener and cocoa powder. Whisk together with a small whisk until well mixed. Microwave for 50-60 seconds, until the cake is cooked through (but not overcooked!)

    I just made this for the first time, and it was fabulous! Here are some things I might try next time though:
    -whisk egg before adding sweetener/cocoa
    -mix everything in a separate, larger container before putting in the mug
    -it was a tad bit dry, so i might splash a bit of milk on top next time, after cooking.

    Oooohhh I am trying this tonight! I used to make mug cakes before the diet and they got me in trouble with how easy they were I'm on my TOM right now and craving chocolate like crazy...thanks for this recipe!

    I just made this... but it doesnt look like cake... it looks like a chocolate egg. but It smells good and tastes good but idk what I did wrong.

    I've made the mug cake several times in the last week It's perfect for satisfying my chocolate craving! I overdid it the first time, and it wasn't very cake-like. Now I only microwave it for 30 seconds and it's more like a gooey cake. I also add a splash of vanilla and some cinnamon. Mmmmm. Going to make one now...lol

    It's missing flour of some sort.

    Here is Collen's recipe. P3, not P2 friendly.

    Mug Cake (I eat this every day!)
    2 Tlbs. Almond flour
    1 1/2 T xylitol
    1 Tlbs. cocoa powder, heaping
    1 egg
    3 Tlbs. half and half or cream
    1 Tlbs coconut oil
    Splash of Vanilla extract
    1 large coffee mug

    Mix all dry ingredients in mug, add egg and blend thoroughly. Add milk, oil and vanilla and mix. Place in 1000 watt microwave for 90 sec. Do not cover mug. Cake will rise. Let cool and place on plate. Add a little whipped cream to top.

    So glad I found this thread Question, Do I have to give up my lunch or dinner meat to be able to have this egg? I would think so...
