    Whats for breakfast??

    Getting tired of the bacon and eggs thing so wondering what are the other options? I am usually a oatmeal person...I would also like something bready like a breakfast bar type thing. I do have coconut flour if that helps and I dont mind being open-minded.

    Minute Muffin

    1/4 cup flax meal
    1-2 packets sweetener
    1 tablespoon butter, melted
    1 egg
    Mix it all together really well in a coffee mug and microwave for one minute. It's great with some butter on it while it's still hot.

    I put cream cheese on mine. Yummy!

    Thanks Sabina....I tried it. I put the cream cheese on it. It will take some getting used to the texture but I do like it...thanks for sharing.

    I am also looking for something besides bacon and eggs for breakfast. I've mixed sliced strawberries with my cottage cheese a few times. Or a whole apple chopped and mixed in. Or mix the fruit with plain greek yogurt that was pretty good. The muffin sounds good. I just can't stand artificial sweeteners. They leave a really bitter taste. There is a recipe around for pancakes made with almond flour or coconut flour. They sounded pretty good. You may want to google it.

    This is my fave "bready" thing to eat for breakfast. In P4 I've added the plump raisins and walnuts... Yum!

    Almond Bread
    Pre-heat oven to 375*
    grease a medium loaf pan (I use non stick foil or parchment paper)
    1/3c Almond flour
    1/2t sea salt
    1/2t baking soda
    2t cinnamon (experiment w/nutmeg, pumpkin spice, allspice)
    1/2c chopped almonds or pecans (I skipped this)
    1/4c stevia (powdered) or to taste (I used Truvia, you could also use xylitol)
    1/3c unsweetened applesauce
    3/4c creamy roasted almond butter
    4 eggs

    Blend dry ingredients; in a separate bowl blend wet ingredients; blend the dry into the wet. Pour into prepared loaf pan and bake 45-50mins.

    15 slices per loaf, 110cals, 5 carb, 4 protein, 10 fat per slice

    I'm not a fan of the artificial tastes of sweeteners either...ugh. But I do love xylitol - have you tried it? Xylitol is what is used in most sugar free gum and such.

    Eggs, eggs, eggs... I will never get sick of them. They are like the perfect food. I'm thinking of putting up a chicken coop so I can have fresh organic ones daily.

    Exactly! Lots of times I would have a can of tuna for breakfast or leftover grilled chicken w/Duke's. Now, on p4 I have been having Kashi Go Lean and a banana in the morning. I've even had 100% Whole Wheat bagel thins w/cream cheese, but not if I am having cereal. I only have one bread/starchy/carby item in a day. If I have cereal for breakfast then I won't have a Joseph's Flax Pita bread for lunch or something.
